Why do people choose a Gluten Free (GF) diet?

These days increasing numbers of people are seeking alternatives to gluten and grains in their diet (wheat, barley, rye, etc) for many different reasons including gluten intolerance, coeliac disease, digestive discomfort & bloating, leaky gut, autoimmune disease, inflammation, anxiety, depression, fatigue or other health concerns.
Many people are also worried about the chemical herbicide glyphosate which is heavily used in the mass production of wheat, corn, soybeans, oats, etc. and is now known to be harmful to human health.
In fact, most common breakfast cereals and bakery products contain liberal amounts of the weed killer Round Up (glyphosate), which has been named by the World Health Organisation as a 'probable carcinogen'.
So it isn't just gluten we are trying to avoid here - perhaps GF should stand for "Gluten and Glyphosate Free"!

Not all GF foods are healthy

When first switching to a gluten free, grain free diet some people search the supermarket aisles for gluten free packaged foods, breads, crackers and wraps for convenience. Unfortunately many of these commercially available gluten free offerings are very high in refined carbohydrates and full of chemical ingredients.
Shop bought gluten free bread is often bland in taste and texture, with a very high carb, high GI content which can make your blood sugar soar. Refined genetically modified flour (corn/ soy/ rice/maize), preservatives, vegetable oil, colon clogging vegetable gums and other dodgy ingredients like "cellulose" (aka wood pulp) are not your tummy's friends!
The excess consumption of a high carbohydrate diet is implicated in the development of diabetes and cardiovascular disease, which is why many leading doctors now advise a "lower carb, healthy fat" diet for optimal health.
So for a multitude of reasons is a great idea to learn how to cook healthy gluten free recipes, such as my delicious gluten free bread and signature dish "Lucy's Loaf"!
