This recipe is the culmination of many years of research and development to find the healthiest ingredients and the best method to create the perfect gluten free loaf. Now "Lucy's loaf" has become my signature dish and very popular with family and friends! Everyone who tries it invariably asks for the recipe so I thought I would share it with you here.
Not only is it tasty and satisfying, my gluten free loaf is high in healthy fibre, healthy omega 3 fats, low carb, low GI, rich in polyphenols, minerals & antioxidants, won't spike your blood glucose levels and is easily digestible. And best of all it is very easy to make - no bread machine required!

Best served thinly sliced, toasted with lashing of real butter (not margarine), It has become a daily staple in our household topped with poached eggs, spinach and avocado for breakfast.
